Back In The Kitchen
Rozz is our James Beard-nominated, head chef. He meticulously hand-crafts each menu with the single purpose of creating a magical dining experience for all of our guests.
Outside of Saltwell, Rozz loves spending time with Shantel, his partner, and his dog, Truffle.
Shantel is our Maître d’ along with one of the owners. She is the magic behind Saltwell’s sparkle. Shantel has been in the hospitality and service industry for years, with her other famed restaurants in Lawrence, Lucky Berry, and Ramen Bowls.
Outside of Saltwell, you can catch Shantel spending time with her 3 boys, and her partner Rozz.
Mia is the sous chef at Saltwell! Most of the time you’ll catch her making bread, desserts, or cakes! She loves helping conceptualize menus and working with such an incredible team.
When she’s not working, she plays bass in a local band and spends time with her lovely wife, Brittany, and their two pets, Billy & Finn!
Austin is a chef here at Saltwell. He is also an artist and craftsman who specializes in ceramics. Through his passion for clay and the making of functional pottery, an interest in culinary arts emerged.
Eve has been at Saltwell for almost 3 years. She started out doing dishes and serving, but now she’s back in the kitchen! She just graduated high school and is planning on going to culinary school at Johnson County Community College.
Outside of Saltwell, you can catch her working at 1900 Barker on Mass and working on her family farm! She enjoys fishing, going to Lonestar Lake, shopping, and traveling.
At Saltwell, Cole mostly does dishes and occasionally helps with plating food!
Outside Saltwell, Cole enjoys messing with computers and software, watching movies, and playing with his two dogs!
Eli just started with us doing dishes.
Outside Saltwell, he enjoys working on cars, watching movies, and helping on his family farm.
Jim has been at Saltwell since the beginning! He started doing dishes and now is our mascot and parking attendant.
Before Saltwell he was an educator for 41 years. When he isn’t working, you can catch him spending time with his two grandchildren and working occasionally at Ramen Bowls.
Our Servers
Kitty consistently entertains and delights customers with her quirky sense of humor and command of fun facts. Having lived in Lawrence and worked in the service and fine dining industry for over a decade, she is frequently requested by customers and leads our front-of-house team.
Kitty spends her free time with her Border Collie mix, Finjamin. She travels every chance, taking her pup with her when she can. Kitty says traveling has made up who she is as a person and welcomes all walks of life into hers.
As a server, Kaliee; ‘s goal is to create an engaging and enjoyable dining experience for every customer. She loves sparking conversations that leave you with a smile and a touch of what she calls “Saltwell magic.”
Outside of Saltwell, she is a small business owner. As the owner of Detailed LLC, she takes immense pride in ensuring your space is left spotless, providing you with complete peace of mind. Building trust and delivering meticulous service is what defines us. Making your experience not only clean and efficient but also one that strengthens our connection.
Behind The Bar
Lemon is one of our resident bartenders at Saltwell. Though she was trained behind our bar beginning in December 2022, she’s gone on to work at restaurants in downtown Lawrence and is the current bar manager at Ramen Bowls. Lemon recently graduated from KU with a Bachelor of Science in Journalism, but bartending and writing both hold an equal passion in her mind. Between work, seeing friends, and late-night drinks you’ll be able to find her around town and most likely laughing at something she said herself.
Caralyn bartends primarily. She does most of our bar prep, and wine pairings.
Outside Saltwell, she works full-time as a manager, server, and bartender at Ladybird Diner. She also enjoys being outdoors, volunteering at the humane society, spending time with her fur babies, and helping at the family farm. Caralyn also loves reading books and welcomes any recommendations!
Alexandria is one of our bartenders here at Saltwell. She came to Lawrence 12 years ago with hopes of a fresh start in life. Being an outgoing social butterfly, bartending was the perfect fit to meet and make new friends for her! Saltwell is a wonderful fit for her type of personality.
Outside of Saltwell, she actively trains for kickboxing and rollerskating. She travels to tattoo conventions and presents her award-winning art in hopes of gaining more awards. One day at a time, her goal is to make the world a better place.
